It will seem like a lot of sauce, but pasta soaks up creamy sauces so quickly. When you add your pasta of choice in, make sure a splash of starchy pasta water goes in too.Add in the finely grated parmesan in a few lots, letting it melt into the cream in between each addition.The stove top should be on a low heat when the cream is added. Next the cream goes in and whisked to combine all the tomato paste in evenly.White wine is added then reduced before adding the tomato paste.I also add chopped anchovies which are optional but they add such great flavour so please don't skip! You want to cook them low and slow for a good 7 - 8 minutes until soft. Like any good sauce this starts with onions and garlic in olive oil over a medium heat in a large pan.See recipe card below for all ingredient list and measurements. Lemon juice - I use freshly squeezed lemon juice in 99% of my recipes, it adds much needed freshness to a rich dish.Black Pepper - I LOVE pepper so always use it in every pasta sauce I make.Parmesan cheese - finely grated with a microplane or the star side of your box grater.I find a creamy pasta sauce can get quite thick, especially once it's off the heat. Cream - Lots of recipes use whipping or heavy cream but my preference is single or light cream.Tomato paste - Tomato paste needs to be cooked out for a few mins.White wine - This is totally optional too.Anchovies - PLEASE TRUST ME! You won't taste them, they add such a depth of flavour and saltiness.Diced onion - As I said above you could leave it out if you wish.Sometimes dicing an onion is just too hard basket after a long day, don't you agree?
